Now let’s move on to preparing the chicken wings.
Start by heating up your Kamado grill.
Heat it up to 130°C.
Meanwhile, take the chicken wings. Place them in a bowl, pour a little bit of cooking oil over them, and sprinkle with, for example, Meat Church The Gospel seasoning blend. If that’s not available, feel free to choose whatever you like, even just salt and pepper, but if so, we recommend adding a bit of brown sugar too.
Once the seasoning blend has been applied, simply press the seasoning onto the chicken, do not rub.
Once that’s done, add a few wood smoking chips to the grill (we recommend cherry wood chips) and adjust the temperature on your grill to 130°C using the dampers (it’s worth mentioning that this is very easy to do on the grills sold by DreamGrill).
Place the chicken on the grill and enjoy a cold cerveza and some sunshine for about an hour. After about 55 minutes to an hour, remove the chicken from the grill, pour over some BBQ sauce (we recommend Blues Hog Original), brush it all together nicely, and return it to the oven for 3-5 minutes to allow the sauce to set.
